Butternut Squash, Barley Pilaf
I got this recipe from Eating Well. I really like Eating Well, and get the magazine too, all the recipes really seem to come out great, and I can almost always find something that I have all the ingredients on hand for.
I added: carrots, celery, walnuts and green beans.
I omitted: lemon juice, garlic, and lemon peel (I didn't have it on hand).
I substituted: vegetable stock for chicken stock.
This was really good, I should have added more butternut squash, it didn't seem to have enough. The green beans did not go over well with other eaters, but I liked it. It was said to be too different of a texture, and didn't go with the rest. The green beans might be better as a side for this dish.
It also needed some more 'oomph'. The garlic and lemon would have added it, I need to make sure I have it next time I make this.
Overall, it was nice and filling, and is vegan too boot. We're trying to go with more vegetables, and less meat.
