Couscous Salad
I wanted to make some Tabbouleh but didn't have the right ingredients, so I made this up. It's made from couscous, parsley, garlic, cucumber, tomatoes, lime juice, and salt. M got to help de-seed the cucumber, and did a lot of stirring and taste testings. In fact so much taste testing that she didn't eat much for dinner after we finished making it. It was a big hit, but the only changes I would make in the future: use cilantro instead of parsley, and add red onions (I didn't have any or I would have added them for this time). Maybe shredded carrot would have worked nicely too, also would have added a nice bit of color. Cut up red bell pepper would work well in it too.
This was quick and easy to make, and was quite filling. A nice cool meal on a warm March night (we hit 80 degrees today).
