Orange Chicken with Carrots
Well, no picture for this dinner, but what we had was:
Black beans
Rice
Orange Chicken with carrots
Quick recipes I made:
Black Beans
1ish Cup Black Beans, soaked over night
1 Onion
2 cups vegetable broth
2 cups water
1 tablespoon grapeseed oil
1) Saute onion in oil until a little brown.
2) drop in beans and then broth and water.
3) bring to a boil.
4) Cover and lower heat to meduim. Cook until beans are tender.
Rice
2 cups rice
1 onion
1 tablespoon Grapeseed oil
Water
1) Saute onion in oil until a little brown.
2) Drop in rice and saute until the rice turns a little clear.
3) Dump into a rice cooker, and add enough water as per the manual.
4) cook.
Orange Chicken with Carrots
1 Split Chicken Breast
1 Orange, juice and zest
1/2 cup water
3 cloves garlic, mashed
1 Tablespoon grapeseed oil
1 onion
5 large carrots
1) Preheat over to 375.
2) Saute onions and garlic in oil in a large dutch oven.
3) Put in chicken skin side down and brown it a little.
4) Add carrots and saute a little.
5) Add orange juice and water.
6)Cover with a tight fitting lid and put into oven.
7) Cook until chicken is done, about 30 minutes.
