Chicken Corn Chowder
M asked for some corn soup. So I obliged. We had some left over homemade chicken broth, and some chicken breast meat to use up. Since it's out of corn season right now, we went with the frozen corn. I bet this is ever better with fresh corn. Next summer I think we'll make a huge batch and freeze/can some. The wife said it was wicked awesome soup and I should write it down.
Chicken Corn Chowder
Ingredients
4 cups Chicken Broth
1 pound mashing Potatoes, diced(we used red)
1 Bag Frozen Corn Kernels
1 Rib Celery, diced
1 Onion, diced
Diced Cooked Chicken
3 Scallions
1) Put broth and potatoes into a biggish pot. Boil. Lower to a simmer and let it go for 10 minutes or so.
2) Drop in corn (reserving 1/2 cup), celery, and onion. Reboil. Resimmer for another 10 minutes.
3) Get out your handy dandy immersion blender, and go to town. Alternately you can stick it in a food processor and do it that way, probably 2 batches. #3 you can do it in a blender, watch out for it shooting everywhere, be careful with the hot stuff in the blender.
4) Get it all back in the pot from where ever you had it. Add chicken, reserved corn, and scallions.
5) Heat a little to get all of it nice and hot.
6) Serve. Enjoy.
