Pineapple Fried Rice
We're trying to make more vegetarian meals and I found this great recipe (http://cookieandkate.com/2015/thai-pineapple-fried-rice-recipe/) from Cookieandkate.com it's for Thai Pineapple Fried rice. I kinda took it and changed it around some.
What you need:
Some coconut oil
2 eggs (beat em up some)
About 1/2 of a fresh pineapple cut into bite sized pieces
a couple stalks of green onion all chopped up
2 cloves of garlic smooshed up
around 3/4 cups of cashews chopped up some
1 yellow squash, grated
a bunch of cooked rice
Some soy sauce
salt
a small handful of cilantro leaves
So to make. Cook the eggs into scrambled eggs. Set aside. Cook the pineapple and the green onions together until the pineapple is a little caramelized on the outside make sure the inside is not caramelized. Set that aside with the eggs. Slightly toast the cashews and then add the garlic and squash. Cook this for a couple minutes until the squash is all brown and most of the liquid has evaporated. Throw in the rice and the rest of the stuff that was waiting on the side. Mix it all up and heat it all up. Lastly toss it with a little soy sauce. Plate it up and garnish with the cilantro. One thing, make sure you were salting all the way through.
