Beef stew

What you need:
A bunch of carrots
2 Stalks of Celery
2 medium onions
4 tbps butter
Stew beef cut into chunks
8 cups broth (beef or chicken, or a mixture of both)
3 or 4 Potatoes
Oregano
Some kind of thickener (flour, corn starch, etc.)

What you do:

1) chop up the carrots, celery, and onions.

2) melt butter in a large stock pot, saute vegetables, for about 5 minutes.

3) Chop up about 1 tbsp oregano and add to pot. Also throw in beef and get it nice and brown on the outside, about 5 more minutes.

4) Add stock and potatoes. Cook for about an hour or so at a simmer.

5) Mix the thickener with some water to make a slurry. Add the thickener and cook for a little bit more.

5) Serve with homemade biscuits, or corn bread.
