So, my wife keeps saying I need to write down the things I make for dinner that we really like.  So here is from last night.

Chicken Cheesy Hash
Ingredients:

2 chicken breasts
1.5 to 2 cups of cheese (any kinds works, we used a mix of Jack and Cheddar)
4 or 5 Medium Potatoes, cut into smallish cubes (any kind, we used yukon gold)
A sprig or two of green onion
1 nice juicy locally grown tomato
Salt
Pepper
Some kind of oil (grapeseed here)

Procedure:

  1. Salt chicken, put a little oil on it, and grill it.  I used a stove top cast iron grill pan that works great.
  2. Saute potatoes in a nice large pan, so that the potatoes are too crowded.  Use some salt and some oil, more oil then you think you need, you don't want those potatoes sticking. A nice crispy outside is your goal.
  3. Cut up onion and tomato, put into little bowls for garnishing the stuff later.
  4. Heat up broiler in oven.
  5. In a pan, or dish lay out all the potatoes. Cover with cut up chicken pieces. Cover all that with the cheese.
  6. Broil until nice a brown and bubbly.
  7. Garnish with the garnish, and enjoy.  Might be a little hot, let it cool a little first.
